Bottom of Pot
- Add 185g of spiral pasta to the bottom of the pot.
- Pour in the jar of sundried tomatoes and roasted garlic sauce, making sure to cover the pasta.
- Add a handful of cherry or sundried tomatoes and a sprinkle of Mediterranean dried herbs.
- Give the mixture a good stir to ensure the pasta is well coated.
Crisping Tray
- Add chopped vegetables of your choice to the crisping tray or a separate dish.
- Add plant-based chicken (or alternative protein) and mix well.
- Sprinkle with Mediterranean herbs and drizzle with olive oil.
- Mix everything together and set aside.
Cooking
- Close the lid and set the Ninja Speedi to 180°C for 12-15 minutes.
- Stir the vegetables halfway through the cooking time and once the preheat has finished.
- When the vegetables are nicely charred and the pasta is cooked, tip the vegetable contents into the pasta and stir to combine.
Grilling
- Add a couple of large spoons of lemon and basil pesto over the top of the pasta mixture.
- Cover with grated cheese (e.g. cheddar).
- Close the lid and grill at 220°C for 3-5 minutes, or until the cheese is melted and bubbly.
- Dish up and garnish with fresh basil (if desired). Serve hot and enjoy!
