- Heat the pot on Sear/Sauté 4 and add oil.
- Add the chopped shallot, chorizo, and sweetcorn. Fry for about 5 minutes, stirring occasionally.
- Stir in the chopped garlic and cook for another 2 minutes.
- Break the spaghetti in half and add it to the pot with the boiling water and a little salt. Change the cooking mode to Steam and set the timer for 12 minutes.
- After 10 minutes, add the carrot strips, chopped spinach, and fresh oregano to the pot. Stir around and cook for the final 2 minutes.
- Change the cooking mode to Sear/Sauté 5 and stir in the red pesto. Heat through for about 1-2 minutes.
- Serve the pasta hot, topped with Parmesan cheese if desired.
