This vibrant Mango Chicken Curry combines sweet tropical fruit with aromatic spices for a restaurant-quality meal that comes together in under 30 minutes. Perfect for busy weeknights when you crave something flavoursome but don’t want to spend hours in the kitchen. For the best flavour balance, use ripe but firm mangoes that yield slightly when pressed, avoiding overly soft fruit that can turn mushy during cooking. |
