Bottom Pot:
- Add coconut milk, curry paste, fish sauce, and brown sugar to the pot. Place potatoes, carrots, onion, and kaffir lime leaves in the pot.
Crisping Tray:
- Toss chicken pieces with 1 tablespoon oil. Place chicken in the crisping tray.
- Set Speedi Meals function to 180°C for 15 minutes.
- While cooking, Cook the rice to the packet instructions in a separate pan.
- Once complete, stir the cornflour into curry sauce until thickened (Add more if needed).
- Serve curry over rice with crispy chicken on top, garnish with fresh coriander.
