Ninja Speedi Spanish-Inspired Pesto Pasta with Chorizo

This recipe is a perfect example of how you can create a delicious meal using leftover ingredients from your fridge. The combination of chorizo, sweetcorn, carrot, and spinach adds a pop of colour and flavour to this Spanish-inspired pesto pasta dish.

Ingredients
  • 150 g Spaghetti
  • 50 g Chorizo (Chopped)
  • 1 Shallot (Chopped)
  • 150 g Sweetcorn
  • 1 Garlic Cloves (Chopped)
  • 1 Carrot (Peeled and stripped into thin strips)
  • 100 g Spinach (Chopped)
  • 4 tsp Red Pesto
  • 10 g Fresh Oregano Leaves (Chopped)
  • 450 ml Boiling Water
  • 1 tbsp Oil
  • Salt (to taste)
  • Parmesan cheese (optional to serve)
Instructions
  1. Heat the pot on Sear/Sauté 4 and add oil.
  2. Add the chopped shallot, chorizo, and sweetcorn. Fry for about 5 minutes, stirring occasionally.
  3. Stir in the chopped garlic and cook for another 2 minutes.
  4. Break the spaghetti in half and add it to the pot with the boiling water and a little salt. Change the cooking mode to Steam and set the timer for 12 minutes.
  5. After 10 minutes, add the carrot strips, chopped spinach, and fresh oregano to the pot. Stir around and cook for the final 2 minutes.
  6. Change the cooking mode to Sear/Sauté 5 and stir in the red pesto. Heat through for about 1-2 minutes.
  7. Serve the pasta hot, topped with Parmesan cheese if desired.
