400g Long Grain White Rice
Instructions
Bottom Pot:
- Add rice and chicken stock to the pot.
- Blend poblanos, onion, garlic, and coriander until smooth.
- Pour green mixture over rice and stir.
- Add 1 tbsp olive oil and half of the seasonings.
Crisping Tray:
- Brush chicken with remaining olive oil.
- Mix manchego with remaining seasonings.
- Coat chicken breasts in manchego mixture.
- Place on crisping tray.
