Bottom of the Pot
- Prepare the bulgur wheat by combining it with water and half a chicken stock cube in the pot.
Crisping Tray
- Halve the courgettes lengthways and cut them into strips.
- Chop the tomato into 1 cm pieces.
- Roughly chop the mint leaves.
- Arrange the chicken thigh pieces across the tray and season with salt and pepper.
- Place the tray in the top position of the Ninja Speedi.
- Cook on Speedi Meals at 200°C for 10 minutes.
- Once the chicken is cooked, fluff up the bulgur wheat before tipping the chicken into the pot with the bulgur.
- Replace the tray and add the courgettes, spraying them with olive oil (and seasoning with dukkah if desired). Select Grill and cook for an additional 5 minutes.
- After the courgettes are cooked, add them to the pot along with the chopped tomato, half the mint, and harissa paste. Stir to combine all the ingredients well.
- In a separate bowl, mix the yoghurt with the remaining mint and season with salt and pepper.
- Serve the dish drizzled with the minty yoghurt mixture for a refreshing finish. Enjoy!
