Ninja Speedi Harissa Chicken with Bulgur

Bottom of the Pot

  1. Prepare the bulgur wheat by combining it with water and half a chicken stock cube in the pot.

Crisping Tray

  1. Halve the courgettes lengthways and cut them into strips.
  2. Chop the tomato into 1 cm pieces.
  3. Roughly chop the mint leaves.
  4. Arrange the chicken thigh pieces across the tray and season with salt and pepper.
  5. Place the tray in the top position of the Ninja Speedi.
  6. Cook on Speedi Meals at 200°C for 10 minutes.
  7. Once the chicken is cooked, fluff up the bulgur wheat before tipping the chicken into the pot with the bulgur.
  8. Replace the tray and add the courgettes, spraying them with olive oil (and seasoning with dukkah if desired). Select Grill and cook for an additional 5 minutes.
  9. After the courgettes are cooked, add them to the pot along with the chopped tomato, half the mint, and harissa paste. Stir to combine all the ingredients well.
  10. In a separate bowl, mix the yoghurt with the remaining mint and season with salt and pepper.
  11. Serve the dish drizzled with the minty yoghurt mixture for a refreshing finish. Enjoy!
