  • 900 g Chicken Breast (Cut in to 2cm chunks)
  • 1 Onion (Finely Chopped)
  • 1 Cooking Apple (Chopped)
  • 50 g Butter
  • 2 tsp Curry Powder
  • 2 tsp Garam Masala
  • 2 tsp Plain Flour
  • 1 Jar Mango Chutney
  • 550 ml Chicken Stock
  • 3 tbsp Lemon Juice
  • 2 tsp Tomato Puree
  • 300 ml Double Cream
  • 40 g Sultanas
Instructions
  1. Sear and sauté the chopped onion and apple in 30g of butter until soft.
  2. Add the remaining 20g of butter to the pot.
  3. Stir in the plain flour, curry powder, and garam masala until well combined.
  4. Add the sultanas, tomato purée, and mango chutney to the pot. Mix well.
  5. Add the chicken stock, lemon juice, chopped chicken breast, and double cream to the pot. Mix until the chicken is well coated.
  6. Switch the Speedi to the slow cooker function and set to high for 6 hours.
  7. Serve the Mango Chicken Curry hot, garnished with fresh cilantro or scallions, if desired.
  8. **Note:** While cooking, prepare microwave rice according to package instructions to serve alongside the curry.
