This aromatic Chicken Madras combines the convenience of the Ninja Speedi with authentic Indian flavours, creating a restaurant-quality curry in minutes. The unique dual-cooking function allows perfectly cooked rice and tender chicken to be ready simultaneously.
The Speedi's steam-air fry combination guarantees the chicken remains juicy while developing a slight char, and the rice absorbs all the aromatic spices while cooking to fluffy perfection in the bottom pot.

- Marinate chicken pieces in 1 tablespoon curry powder, salt, and pepper for 10 minutes.
Bottom Pot:
- Add remaining curry powder, stock, and a pinch of salt to the bottom pot. Place onion, garlic, and ginger on top of rice. Pour in coconut milk and chopped tomatoes.
Crisping Tray:
- Arrange marinated chicken pieces on the crisping tray. Drizzle with vegetable oil.
- Set Speedi to Speedi Meals mode at 180°C for 15 minutes.
- In the meantime cook the rice to the packet instructions in a separate pan
- When cooking completes, let rest for 2 minutes. Fluff rice with a fork and transfer to serving bowls. Top with chicken pieces and garnish with fresh coriander.
