Ingredients
  • 1 tbsp Olive Oil
  • 1 Onion (chopped)
  • 4 Shallots (halved)
  • 1 Celery Stalk (chopped)
  • 2 Garlic Cloves (chopped)
  • 100 g Risotto Rice
  • 80 g Frozen Peas
  • 80 g Edamame
  • 4 Large Mushroom (chopped)
  • 60 ml White Wine (optional)
  • 375 ml Stock (mushroom cube)
  • 2 Hake Loins
  • Salt (to taste)
  • Black Pepper (to taste)
Instructions
    Bottom of the Pot
  1. Heat the Ninja Speedi on Sear/Sauté mode at heat level 5.
  2. Add the Olive Oil into the pot, followed by the chopped onion, celery, and garlic. Sauté until softened.
  3. Add the rinsed risotto rice and continue to sauté, stirring frequently.
  4. Stir in the peas, edamame, and chopped mushrooms.
  5. Add the thyme (to taste) and pour in the white wine (if using) and the stock.
  6. Add the remaining chopped mushrooms into the pot.
  7. Crisping Tray
  8. In a separate bowl, place the hake loins and halved shallots. Spray them lightly with oil and season with salt and pepper.
  9. Place the crisping tray above the pot with the fish and shallots.
  10. Set the Ninja Speedi to SPEEDI MEAL mode at 180°C for 10 minutes.
  11. After 10 minutes, remove the fish and shallots from the crisping tray.
  12. Return to the bottom of the pot and continue cooking for an additional 5 minutes to reduce the liquid, or longer if necessary to achieve your desired consistency.
  13. Serve hot and enjoy your delicious Mushroom Risotto with Hake!
