Ninja Speedi Mediterranean Prosciutto-Wrapped Cod in Tomato Sauce

Ingredients
  • 400 g Cherry tomatoes
  • 30 ml White wine
  • 1 Lemon (zested)
  • 1/2 tsp Chilli Flakes
  • 2 Garlic cloves (minced)
  • 50 g Black Olives (sliced)
  • 1 tbsp Capers
  • 50 g Spinach
  • 2 cod loins (approximately 150g each)
  • 4 Prosciutto (slices)
  • 1 tbsp Harissa Paste
Instructions
    Bottom of the pot:
  1. Mix cherry tomatoes, white wine, lemon zest, chilli flakes, garlic, olives, and capers in the pot.
  2. Heat the sauce mixture on Sear Saute for 5 minutes to warm it up.

  3. Add a handful of spinach to the sauce.
  4. Spread harissa paste over cod loins.
  5. Wrap each cod loin in prosciutto.
  6. Place wrapped cod on top of the sauce in the pot.
  7. Cook at 175°C (350°F) for 16 minutes using the Bake/Roast function.
  8. Serve with Spanish-style smokey grains and rice.
