This aromatic Massaman curry combines the rich, mild flavours of Thai cuisine with tender chicken and crispy skin, all cooked simultaneously in the Ninja Speedi. The bottom layer creates a fragrant coconut curry sauce while the top chicken pieces crisp to perfection.
The dish balances sweet, savoury, and subtle spices characteristic of Massaman curry, featuring potatoes, onions, and tender chicken pieces. This simplified version maintains authentic flavours while employing the unique cooking capabilities of the Ninja Speedi.

- Season chicken thighs with salt and pepper.
Bottom Pot:
- Combine coconut milk, curry paste, stock, fish sauce, and palm sugar. Add potatoes, onions, garlic, and bay leaves. Stir to combine all ingredients.
Crisping Tray:
- Place seasoned chicken thighs skin-side up. Brush with oil.
Set Speedi to Speedi Meals function at 180°C for 15 minutes.
While the Curry is cooking cook the rice in a Separate Pan
Once completed, remove chicken and let rest for 5 minutes. Stir curry sauce and check vegetables for tenderness. Serve curry with rice in bowls topped with crispy chicken, garnished with crushed peanuts.
