Ninja Speedi Italian Pasta Bake Delight

This Italian-inspired pasta bake is a perfect recipe for a speedy meal that's packed with flavour and nutrients. With the help of your Ninja Speedi, you can have a delicious and satisfying meal on the table in no time. Serve with a sprinkle of fresh basil for a pop of colour and freshness

Ingredients
  • 185 g Pasta (Of your choice I use Fusilli)
  • 500 g Jar of Sundried tomatoes and roasted garlic sauce
  • Water (Fill the pasta jar up with water and use this)
  • handful Cherry tomatoes
  • 1 tsp Mediterranean dried herbs
  • Chopped vegetables of your choice (e.g. mushrooms, courgette, onion, red/orange pepper, garlic)
  • 300 g Plant-based chicken (or alternative protein)
  • Olive oil
  • 2 tbsp Lemon and basil pesto (Or Regular Pesto if you can't find)
  • Grated cheese (e.g. cheddar or parmesan)
  • Fresh basil (optional)
Instructions
    Bottom of Pot
  1. Add 185g of spiral pasta to the bottom of the pot.
  2. Pour in the jar of sundried tomatoes and roasted garlic sauce, making sure to cover the pasta.
  3. Add a handful of cherry or sundried tomatoes and a sprinkle of Mediterranean dried herbs.
  4. Give the mixture a good stir to ensure the pasta is well coated.
  5. Crisping Tray
  6. Add chopped vegetables of your choice to the crisping tray or a separate dish.
  7. Add plant-based chicken (or alternative protein) and mix well.
  8. Sprinkle with Mediterranean herbs and drizzle with olive oil.
  9. Mix everything together and set aside.
  10. Cooking
  11. Close the lid and set the Ninja Speedi to 180°C for 12-15 minutes.
  12. Stir the vegetables halfway through the cooking time and once the preheat has finished.
  13. When the vegetables are nicely charred and the pasta is cooked, tip the vegetable contents into the pasta and stir to combine.
  14. Grilling
  15. Add a couple of large spoons of lemon and basil pesto over the top of the pasta mixture.
  16. Cover with grated cheese (e.g. cheddar).
  17. Close the lid and grill at 220°C for 3-5 minutes, or until the cheese is melted and bubbly.
  18. Dish up and garnish with fresh basil (if desired). Serve hot and enjoy!
