4 Chicken Thighs (Skin-on, Bone-in)
200g Long Grain Rice
500ml Chicken Stock
1 Red Pepper (Diced)
100g Frozen Peas

2tbsp Olive Oil
2tsp Smoked Paprika
1tsp Salt
1/2tsp Black Pepper

Instructions
Pat chicken thighs dry and season with salt, pepper, and smoked paprika.
For bottom pot:
Add rice, stock, saffron, diced onion, peppers, and garlic to the bottom pot. Stir to combine all ingredients.
For crisping tray:
